Protein Cherry & Raspberry Ripe Bars

Prep Time: 45 mins (plus ~3 hours freezing time) Makes: 14 small squares

They taste so good and I personally think they are even better than the real Cherry Ripe!

These Cherry & Raspberry Protein bars will please everyone.

They are super quick to make! No baking... all natural ingredients with a little bit of a protein punch to keep you satisfied for longer.

INGREDIENTS

BASE LAYER

  • 1 cup almonds

  • 1/3 cup cacao

  • 1/3 desiccated coconut

  • 1/2 cup Aussie Bodie chocolate perfect protein 1/3 cup desiccated coconut

  • 3 tbs melted coconut oil

  • 7 dates, soaked

RASPBERRY LAYER

  • 1 cups frozen raspberries, 1 cup frozen cherries

  • 2/3 cup raw cashews, soaked for 6 hours or overnight

  • 1/2 cup desiccated coconut

  • 1/2 cup maple syrup

CHOCOLATE LAYER

  • 1/2 cup of coconut oil

  • 1/2 cup of cacao powder

  • 1/2 cup Aussie Bodie chocolate perfect protein

  • 1/4 cup of organic maple syrup

  • 1 teaspoon vanilla essence

METHOD

First of all get your dates and soak them in boiling water, leave them to soak.

Get a food processor and process the almonds, cacao, coconut, protein powder until you get a floury consistency, then add in the coconut oil & dates and process; if the mixture isn't wet enough I just add in a teaspoon of vanilla essence.

Line a square baking tray with baking paper then press mixture into it and freeze to chill while you make the next layer.

Process all ingredients for the middle layer until combined.

Pour this over the top of the base layer and return to the freezer to set before topping with the chocolate layer.

For the chocolate layer, melt coconut oil over a low heat, then stir in the cacao powder;

Once smooth, add the protein powder & maple syrup.

Pour this layer over the cherry & raspberry layer and place it back in the freezer to set (approx. 2-3 hours).

Remove from the freezer when firm and slice into desired size.

You can store them in the freezer.
