Breakfast mushroom cup's

 P O W E R   O F  M U S H R O O M S... fit for Champingnions!!! 

 

Kick up your metabolism with mushrooms, they are described as "meat for vegetarians" and here are just a few reasons why; they have an excellent source of selenium, which is good for the bladder. They have a rich source of vitamins B2, B3, high in vitamin D, protein, Iron and antioxidants, which improves your immune function. They are low in calories and carbohydrates but high in fibre. 

 

Try stuffing some mushrooms they're easy to make and the variations are endless you can get as creative as you like. You can also cook them in advance and take them on the run. 

 

Here’s my slap- dash recipe but feel free to alter your fillings.

You can use button or Portobello mushrooms, wash and break off the stem, brush some olive oil over the mushrooms and bake them in the oven on 180* for 10mins.

Meanwhile I sautéed some chorizo and some garlic in a frying pan, and sautéed some asparagus.

Take the mushrooms out of the oven I cracked an egg inside, and placed chorizo, asparagus, and some baby spinach and put it back in the oven until the egg was cooked.

They taste great cold and perfect to grab quickly on run in the mornings for breakfast.
