Mini Frittatas-


Bake ahead breakfast Mini Frittata muffins, perfect for those busy week day mornings.

They are delicious & healthy. Not to mention a super easy to make...

You can get creative and add in any ingredients you like. Just get a muffin tin, for your base get 6 eggs, 1/4 cup of milk, 1 table spoon of parmasan cheese, salt & pepper and wisk till its all combined.

And now its time to get a little creative! Heres two ideas I came up with...

For the first batch I roasted capsicum, mushrooms, zuchini & garlic then mixed them through the eggs with some spinach. I lined the muffin tins with bacon then filled them with the mixture and let them cook through on 180* for 20min

My second batch I roasted a bunch of asparagus, sautaed 4 shallots with some garlic, I bought a packed of ready cooked/smoked salmon and let them cook through 180* for 20min

They are seriously delicious youll never complain about a boring breakfast again!
